Restaurant Style Mexican Rice


We were having company so I decided to make some yummy rice to go along with our usual sides for the steak fajitas we are currently obsessed with. My kids don't love rice, but I do, so I don't make it that often because I end up eating literally the entire batch haha! But even the kids liked this new version! I was pretty impressed with how legit it tasted I must admit. Maybe a tad too much tomato taste, but really on the whole it was quite authentic. I found the recipe, and the first picture, on Fabulously Delicious and we will definitely make it whenever we are having people over for a Mexican-type meal!

Ingredients
1 cup white rice
1 Tbsp. Extra Virgin Olive Oil
1 green bell pepper, sliced and seeds reserved
1 (8 oz) can tomato sauce
1 bouillon cube (I use vegetable but chicken is fine, too), chopped
1/4 tsp salt
1 tsp garlic salt
1/4 tsp chili powder
1/4 tsp cumin
Pinch red pepper flakes
Pinch black pepper

Directions
Heat up olive oil in a pan on medium/high. Add in rice and bell pepper seeds. Stir frequently and cook until rice starts to lightly brown; about 5 minutes.
Add in tomato sauce, and 2 cans of water. Stir. Add in salt, garlic salt, chili powder, cumin, red pepper flakes, black pepper and chopped bullion cube. Stir. Add in bell pepper slices. Bring to a boil.
Cover and reduce heat to simmer. Cook for 40 minutes (mine only took 30 minutes). Remove bell pepper slices prior to serving.

Cuban Style Pork

Can I just say that is one of my favorite food pictures?! I love it when a dish photographs so well, especially if it was tasty, because I know people are more likely to try it! This meal, which I saw on The Daily Dish, had been on menu for a few weeks and kept getting pushed off over and over again for one reason or another. I am so glad we finally made it though, Mike and I loved it! I bought a can of black beans with jalapenos and lime juice and the spiciness of those with the sweetness of the pork was a perfect combination!

Ingredients:
- 1 lb pork tenderloin, fat trimmed (I used pork loin chops)
- 1 large yellow onion, thinly sliced
- 4 cloves of garlic, minced
- 1 orange, zest and juice, divided
- Juice of 2 limes, divided
- 2 tbsp olive oil, divided
- 1/3 cup of water
- Salt & pepper, to taste
- Optional: 1 lime, zested and cut into wedges, for garnish
- Optional: remaining orange zest, for garnish
- Optional: cilantro, for garnish

Method:
1. Use a fork to pierce the pork tenderloin (this will help in the marinating process), and then cut the tenderloin into two-inch chunks.
2. In a large ziploc bag or glass container, combine the pork chunks, onion, garlic, the juice and zest of half of the orange (set the other half aside for now), the lime juice, 1 tbsp of olive oil, and salt & pepper.
3. Once the bag or container is sealed, shake up the ingredients to mix them all together, and refrigerate for a minimum of 30 minutes. (Note: the longer you let the meat marinate, the more flavorful it will be).
4. In a large pot, heat the remaining tbsp of olive oil over medium-high heat.
5. Using tongs, transfer the pork (only!) to the pot. Leave the onions aside for now.
6. Cook the pork chunks for 3 to 4 minutes on each side, or until they turn golden brown.
7. Remove the browned pork from the pot and onto a plate.
8. Add the onions to the pot and cook for a few minutes, or until they start to lightly brown.
9. Then add the pork back into the pot and stir together with the onions.
10. Add 1/3 cup of water, the remaining juice of the orange, and another lime's juice to the pot and once it begins to bubble, cook the pork and onions covered for about 15 minutes.
11. Serve and garnish with orange and lime zest, lime wedges, and cilantro (optional).

Rice and Bean Enchiladas with Creamy Tomatillo Sauce

After one not-so-successful recipe attempt this week (the chili bean stuffed peppers were yucky :-(!), I was a little nervous about these enchiladas. They had potential to be a huge success but also a miserable failure. I L-O-V-E-D them! Rachael Ray recipes aren't always the healthiest but you can nearly always make some substitutions to help them out. I couldn't wait for lunch the next day to eat some more! And even my meat-loving husband had no complaints about these meatless enchiladas.

Ingredients:
1/2 cup long-grain white rice (I used brown rice)
1 15 ounce can pinto beans, drained
1 2/3 cups shredded monterey jack (I used 2% Pepper Jack, adding some nice heat)
2 scallions, sliced
1 3 ounce package cream cheese, cut into 1-inch pieces (I used 1/3 fat version)
1 2/3 cups jarred salsa verde (I used green enchilada sauce)
2/3 cup heavy cream (I used FF half and half)
1/2 cup chopped cilantro, plus more for garnishing
1/4 cup vegetable oil (I heated mine in microwave, so no oil)
8 6 1/2 inches corn tortillas

Directions:
In a small saucepan, bring 1 cup water, the rice and 12 tsp. salt to a boil over high heat. Lower the heat to low, cover and cook until the water is absorbed, about 15 minutes. Fluff with a fork and transfer to a medium bowl to cool slightly. Add the beans, 1 cup Monterey jack, the scallions and cream cheese; stir gently.
Meanwhile, using a blender or food processor, blend the salsa verde, cream and 1/2 cup cilantro until smooth.
Preheat the oven to 350 degrees . In a medium skillet, heat the oil over medium-high heat. Using tongs, carefully place 1 tortilla at a time into the hot oil and fry, turning once, until softened, 5 to 10 seconds per side. Transfer to paper-towel-lined plates to drain. (I place 3 tortillas in a paper towel, wrap them up and micro for 30 seconds to get them soft)
Mound 12 cup of the filling down the center of each tortilla. Roll up tightly, then place seam side down in a 7-by-11-inch glass baking dish. Pour the sauce over the top and sprinkle with the remaining 1/3 cup Monterey jack. Bake until bubbly, about 20 minutes. Top with more cilantro.

Sausage and Spinach Rice Bowls

I found this meal idea on Fabulously Delicious. It was easy, fast and super tasty. I ate it for I think 4 meals as leftovers over the next few days and still loved it! Sometimes I topped it with some shredded cheese too, which made it even better. Next time I want to try it with quinoa...I think it would be fab!

Ingredients:
1 1/2 cups cooked rice (I brown rice, but I think I'll use quinoa next time)
1 tsp. olive oil
1 lb. hot Italian turkey sausage links, casings removed
1/2 onion, chopped
5 cloves garlic, minced
1 4-oz can sliced mushrooms
(I added 1 14 oz can of artichokes, drained)
1/2 cup chopped roasted red bell peppers (jarred or fresh)
1 1/2 cups chopped fresh spinach

Directions:
In a large skillet, heat olive oil over medium heat. Add sausage and onion; cook, stirring to crumble sausage, until sausage is cooked through and onion is tender. Stir in garlic; cook 2 minutes more. Add mushrooms and peppers, stir to combine, then add spinach. Cook until spinach is just wilted. Stir in rice, mix well to combine and continue cooking until heated through.

Texas Sweet Onion Casserole

The moment I saw this on Homesick Texan I was dying to try it! Luckily I had an excuse to make a big, yummy dish like this and went on a search to find something else to go with it. I settled on trying a Santa Fe Spice Rub (recipe to come) and grilled chicken. We made tacos out of the chicken and some sauteed peppers, along with guacamole and then had this cheesy, delicious rice on the side. It was a heavenly meal!!!

Ingredients:
2 tablespoons unsalted butter
2 large Texas sweet 1015 onions, peeled and chopped (about 2 pounds)
3 cups cooked rice
1/4 teaspoon ground cumin
1/4 teaspoon ground allspice
Pinch of cayenne
2 cloves garlic
1 or 2 chipotle chiles en adobo, diced (depending on how hot you want it)
2 cups sour cream
2 cups shredded Gruyere (8 ounces), divided
Salt to taste
Chopped cilantro for garnish (optional)

Directions:
Preheat the oven to 350 degrees.
In a large ovenproof skillet, preferably cast iron, on low heat melt the butter. Add the chopped onion and while occasionally stirring cook for 10 minutes until soft.
Meanwhile, stir together the cooked rice, cumin, allspice, cayenne, garlic, chipotle chile, sour cream and 1/2 cup of the Gruyere cheese. Taste and adjust seasonings, then add salt to taste. Add rice mixture to the skillet and stir until onions are mixed well with the rice. (Alternatively, you can bake the casserole in a greased 10-inch baking pan.) Top with the rest of the Gruyere cheese and bake for 30 minutes uncovered or until brown and bubbling. Serve topped with cilantro, if you like.
(I put into 2 8x8 glass dished to bake)

Brown Rice and Black Bean Casserole

This is a perfect meal for fall and winter! It's has the cheesiness I love in casseroles, but without the guilt because of all the added veggies and lowfat cheese. I saw this recipe on Peachtree Cooking and luckily I loved it enough to eat it for lunch and dinner for days in a row...the rest of my family were not fans :-). I would still make it again though! I think I would use a low-fat cheddar on top that melts a little easier and just use the swiss mixed in with the casserole itself.

Ingredients:
1/3 cup brown rice
1 cup vegetable broth (I used chicken broth)
1 Tbs. olive oil
1/3 cup onion, diced
1 medium zucchini, chopped or thinly sliced
2 chicken breasts, cooked and diced (I used 1 can chicken)
3/4 cup sliced mushrooms
1/2 tsp. cumin
Salt, to taste
Cayenne Pepper, to taste
1 (15 oz.) can black beans, rinsed and drained
1 (4 oz.) can green chilies
1/3 cup carrots, chopped small
2 cups shredded swiss cheese (I used 2% swiss slices and shredded them)

Directions:Mix the rice and chicken broth in pot on stovetop, bring to a boil. Reduce heat to low, cover and simmer 45 minutes, or until rice is tender. Preheat oven to 350 degrees. Lightly grease a medium-sized casserole dish (I used 9x9). Heat the olive oil in a skillet over medium heat and cook the onion until tender. Mix in the zucchini, chicken, and mushrooms. Season with cumin, salt and cayenne pepper. Cook and stir until zucchini is lightly browned and chicken is heated through. In a large bowl, mix the rice, onion, zucchini, chicken, mushrooms, beans, chilies, carrots, and half of the swiss cheese. Transfer to the baking dish and sprinkle remaining cheese on top. Cover casserole dish loosely with foil and bake for 30 minutes. Uncover and bake 10 more minutes, or until bubbly and lightly browned.

Chipotle's Barbacoa Beef on Cilantro Lime Rice

This is another recipe from Skinnytaste...a new favorite recipe spot for me! Slow cooker meals are always a hit for me and this one was AMAZING! I love Chipotle and this definitely hit the spot. We served it on the Cilantro Lime Rice (recipe below) with the Corn Salsa on top, burrito bowl style. Delish!

Ingredients:
3 lbs beef eye of round or bottom round roast, all fat trimmed
5 cloves garlic
1/2 medium onion
1/2 lime, juice
2-4 chiptoles in adobo sauce (to taste)
1 tbsp ground cumin
1 tbsp ground oregano
1/2 tsp ground cloves
salt and pepper
3 bay leaves
1 tsp oil
1 cup water

Directions:
Place garlic, onion, lime juice, cumin, oregano, chiptoles, cloves in a blender.
Trim all fat off meat, cut into 4 inch chunks. Season with salt and pepper and brown on high heat in 1 tsp oil. Add liquefied spices, water, bay leaves and simmer on low two hours in a pressure cooker. (If you are making this in a regular pot, you will have to double the cooking time to at least 4 hours or more, covered on low flame and add more water from time to time to make sure it doesn't dry out.)
Once cooked and the meat is tender, remove the meat and place in a dish. Shred it with two forks, and reserve the liquid for later (discard the bay leaf). Return the shredded meat to the pot, adjust salt and cumin (you may need to add more) to taste and add some of the reserved liquid back. Simmer uncovered for about 10 minutes to let the flavors penetrate.
For the Slow Cooker...
Sear meat on high heat in a pan with 1 tsp oil or oil spray. Place all ingredients in your crock pot and cover. Cook low for 8 hours. After 8 hours, shred pork using two forks and combine well with the juices at the bottom. Remove bay leaves and adjust salt and cumin (you will probably need to add more). Let it cook another 15-30 minutes. Super easy!!

Cilantro Lime Rice
1 cup extra long grain rice or basmati rice
1/2 lime, juice of
2 cups water
1 tsp salt
3 tbsp fresh chopped cilantro
3 tsp vegetable oil

In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 15 minutes. Shut off flame and keep covered an additional 5 minute.
In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.

Zucchini Risotto

This was another recipe I found on Delicious Dishes. It is such a bummer when recipe sites you like stop posting, but at least you can always go back through the old ones! This was really yummy and could easily be a main course meal. I served it with some chicken just because I knew it wouldn't work as a meal for my family, but I would have been fine without anything else. I love zucchini and I love risotto so it was a great combination for me!

Ingredients:

1 cup arborio rice
2 Tbsp butter
1 onion, chopped
1 tsp garlic salt
3 cups chicken stock
1/2 red pepper, chopped
1 zucchini, chopped
1/2 cup milk
3/4 cup grated parmesan cheese
freshly ground pepper

Directions:
In heavy saucepan, saute rice in butter stirring constantly.
Add onion, red pepper, and garlic salt. Saute until onions and peppers are tender.
Add 1 cup chicken stock, stirring frequently.
As the liquid cooks down, continue adding 1/2 cup stock at a time until all the stock is used and the mixture is creamy. Keep stirring!
Add zucchini.
Stir in milk.
Fold in cheese.
Top with fresh ground pepper.
Serve immediately.

Mediterranean Spring Bowls

As soon as I saw these bowls on Favorite Family Recipes I couldn't wait to try them! They incorporate so many things we love and they didn't disappoint. It was fun to add some new and different flavors from our usual southwestern fare and I couldn't stop eating it! (there is lots of garlic, so be sure everyone eats some so you don't kill each other with your breath!) (it's a copy cat of White House Grill, but I have never been there so I'm not sure how it compares)

Ingredients:
1 bottle Lawry’s lemon pepper marinade
2 chicken breast halves (I used 3)
lemon pepper
1 onion, diced
1 medium-sized zucchini, diced
1 green bell pepper, diced
1/2 c. garbanzo beans (I forgot to get these so left them out)
12-15 cherry (or grape) tomatoes
feta cheese (used reduced fat)
For the rice:
1 c. long-grain, white rice
2 c. water
3 Tbsp. olive oil
juice of 2 lemons
4-5 cloves garlic, crushed (I used 6)
1/2 tsp. pepper
salt (to taste)

Directions:
Marinate chicken breast halves in lemon pepper marinade for at least an hour (sealed tightly in a plastic Ziploc bag works best). Remove chicken and discard marinade. Place chicken in a 9x13 glass baking dish and sprinkle with lemon pepper on both sides. Bake at 350-degrees for about 35 min or until juices run clear and chicken is completely cooked through. While chicken is cooking, heat a little bit of oil in a large skillet. Add diced onion, zucchini, bell pepper, and garbanzo beans. Saute until onions become clear. Add tomatoes and saute an additional minute or so until tomatoes become hot.
Chop up cooked chicken into smaller pieces and stir in with sauteed veggies.
For the rice:
Cook rice with water according to package instructions (or in a rice cooker). After the rice is cooked, combine remaining ingredients (from olive oil on...) and pour slowly over rice while fluffing with a fork. Add more lemon juice a little at a time if needed.
To serve: (I put it all in one big serving bowl this time)
Put a scoop or two of rice on a plate (or in a bowl). Add sauteed veggies and chicken. Top each bowl with about 2 Tbsp. feta cheese (or to taste).

Crock Pot Chicken and Rice Soup

Although it is admittedly a little warm for soup here in Houston, this week was a crazy one and I was looking for a healthy crock pot meal and this one (from Family Circle magazine) looked good. It was easy and flavorful and light. I'm a fan!

Ingredients
* 1 cup wild rice and grain blend or all wild rice (I used an Uncle Ben's box without the spice packet)
* 1 medium onion,chopped
* 4 carrots, peeled and chopped
* 3 ribs celery,trimmed and chopped
* 1 package cremini mushrooms, cleaned and quartered (large ones cut in sixths)
* 1 whole chicken (3 or 4 pounds), cut up, wings reserved for another use (I used 2 breasts)
* 2 cans (14.5 ounces each) low-sodium chicken broth
* 2 teaspoons dried poultry seasoning
* 1 teaspoon salt
* 1/4 teaspoon pepper
(plus 4 cups water)

Directions
1. Sprinkle rice into bottom of slow cooker. Add onion, carrots, celery and mushrooms. Remove skin from chicken pieces and trim rib bones from the breastbone. Place chicken pieces over vegetables; add broth and 4 cups water. Add poultry seasoning, 1/4 teaspoon of the salt and the pepper.
2. Cover and slow cook for 6 hours on HIGH or 8 hours on LOW. Carefully remove chicken to a cutting board; discard bones. Shred or chop chicken; return to slow cooker and add remaining 3/4 teaspoon salt. Serve warm.

Greek Orzo (or Brown Rice)

This salad from Taste Buds was SOOO delicious and a perfect lunch to make and have on hand during the week. I used brown rice instead of the orzo to keep it gluten-free and also threw in some chicken to add a little protein and help feel me up. I LOVE it and can't wait to go eat more today!!!

Ingredients:
1 cup uncooked orzo (or 3/4 cup brown rice)
1/2 cup diced cucumber; seeds removed
1/3 cup diced red onion
1/3 cup fresh minced parsley
3 Tbsp freshly squeezed lemon juice
1 Tbsp olive oil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1 cup diced tomato
1/2 cup crumbled feta cheese (I used reduced fat)
1/4 cup chopped, pitted Kalamata (or black) olives (I left these out)

Directions:
Cook orzo according to package. Drain. Combine orzo, cucumber and onion in a large bowl; toss well. In a separate bowl combine parsley, lemon juice, oregano, olive oil, salt and pepper. Stir well with a whisk until incorporated. Pour over orzo and add remaining ingredients. Toss gently to coat. Serve with grilled pita bread (brush with olive oil, sprinkle on a little kosher salt and warm through on grill.)

Rumbi Rice Bowls

I have never been to Rumbi, but when I saw this recipe on Favorite Family Recipes I thought it looked really delicious and was intrigued by the combination of flavors and ingredients used. Her picture looks much more appetizing than mine though - I was in a hurry so I used my food processor to chop all the veggies, which left much smaller pieces. In my opinion the sauce makes this meal! I loved the rice and the chicken and veggies are just ok, but when you combine the two together and top it with the sauce it is heavenly! Loved it!!!

Ingredients:
1 Tbsp. vegetable oil (I used canola)
4 carrots, peeled and grated
3 celery stalks, washed and sliced
1 zucchini, chopped into small cubes
1 1/2 c. chopped broccoli florets
2 c. chicken, grilled and cut into small cubes (I used pre-cooked and chopped chicken, like I said, I was in a hurry)
*Rumbi Rice (see recipe below)
**Spicy Hawaiian Teriyaki Sauce (see recipe below)

Heat vegetable oil in a large skillet over medium-high heat. Add carrots, celery, zucchini, and broccoli (pretty much equal parts of said vegetables.. you can add more or less veggies depending on your taste). Saute ONLY until vegetables are crisp tender. About 1-2 minutes tops. Serve over Rumbi rice and top with chicken. Serve with Spicy Hawaiian Teriyaki Sauce on the side.

*Hawaiian Coconut Rice with Red Beans aka Rumbi Rice
2 c. long grain white rice
2 1/2 c. water
1 (14oz) can coconut milk (I used light)
1/2 Tbsp. sugar
1 can red beans, drained and rinsed

Combine all ingredients in a rice cooker. Gently stir it all together so the beans are all mixed. Place the lid on and start the rice cooker. Fluff rice with a fork before serving.

**Spicy Hawaiian Teriyaki Sauce:
3/4 c. teriyaki sauce
1 tsp. soy sauce (I used low sodium)
2 tsp. chili garlic sauce (aka: sriracha)
1 tsp. fresh ginger
pinch of salt
pinch of brown sugar
1 Tbsp. cornstarch
2 Tbsp. cold water

Combine teriyaki sauce, soysauce, garlic sauce, ginger, salt, and brown sugar in a small saucepan. Bring to a boil and then reduce to a simmer. Combine cornstarch and water and SLOWLY add to sauce for thickening. You want it to be slightly thicker than the teriyaki sauce. Allow to simmer for about a minute. Cool to room temperature and serve with your rice bowls. (I just realized I didn't even cook mine, I just mixed it in a bowl and poured it on top and it was great)

Mexican Sour Cream Rice

I found this rice recipe on Cassie Craves and it was super flavorful! I even halved the amount of sour cream and cheese, trying to lighten it up a little bit, and we still loved it!

Ingredients:
1 cup uncooked long grain white rice
1 14-ounce can chicken broth
1 cup sour cream (I used 1/2 cup)
1 4-ounce can diced green chile peppers
2 cups shredded pepper-jack cheese, divided (I used 1 cup, divided)
1 cups frozen whole kernel corn
1/4 cup finely chopped fresh cilantro
Salt and ground black pepper to taste

Directions:
1. In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover, and simmer 20 minutes (because I used Minute Rice, I decreased the simmering time to about 10 minutes).
2. Preheat oven to 350 degrees. Lightly grease a 1-1/2 quart casserole dish.
3. In the pot with the cooked rice, mix the sour cream, green chile peppers, 1 cup cheese, corn, and cilantro. Season with salt and pepper. Transfer to the prepared casserole dish, and top with remaining cheese.
4. Bake uncovered 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.

Hawaiin Chicken Bowl

This recipe is from Kill the Gluten and I decided to try it because it looked good most importantly, I love broccoli and it used a crock pot. It was really good, pretty healthy and the ranch was a fun addition I wouldn't have thought of on my own. They mentioned that they have made it with pork too and that it was just as tasty.

Ingredients:
6 boneless, skinless chicken breasts (I used 3)
1 can (8 oz) crushed pineapple (I used lite)
1 bottle (16 oz) [gf] barbecue sauce (I used lite)
4-6 cups rice, cooked (I used 1/2 white and 1/2 brown)
Steamed broccoli
Ranch dressing

Directions:
Place meat in 3 1/2-5 quart slow cooker. Combine pineapple and barbecue sauce and pour over meat. Cook on high heat for 3-4 hours or on low for 6-8 hours. Layer in bowls: rice, chicken, broccoli, and a little ranch dressing. Makes 4-6 servings.

Lemon Artichoke Risotto

This is yet another Rachael Ray magazine recipe, and I think the last one I saved from her most recent issue. This was also my favorite of the ones I tried! It was SOOO delicious! I was glad it made enough for a couple days worth of leftovers for lunch because I looked forward to it every time. Even my kiddos ate most of theirs which shocked me...and made me happy :-)! The nuts give the meal enough substance that I don't even think you miss the meat.

Ingredients:
2 cups chicken broth
4 T butter
1 onion, finely chopped
2 cups arborio rice
1 1/4 c drained chopped canned artichoke hearts (1 can)
grated peel of 1 lemon plus 2 t lemon juice (I used 2 1/2 t juice and no peel)
salt and pepper
2/3 cup grated parmesan cheese
1/3 c chopped flat-leaf parsley
1/3 c walnuts, toasted and chopped (I thought I had some but didn't so I used pecans instead and they were delish!)

Directions:
-In saucepan, bring the broth and 4 c water to boil, cover and keep at a simmer.
-In large saucepan, melt 2 T butter over med heat. Add the onion and cook, stirring, until softened, about 5 minutes. Add the rice and stir until lightly toasted, about 2 minutes.
-Stir in 1 cup of broth mixture, bring to a simmer and cook, stirring, until the liquid is absorbed, 2-3 minutes. Maintaining a low simmer, continue to add the broth mixture, 1/2 cup at a time, stirring frequently and allowing the rice to absorb the liquid. Cook until the rice is tender, about 20 minutes.
-In the last 3 minutes of coking, add the artichoke hearts, lemon peel, lemon juice and the remaining 2 T butter; season with salt and pepper. Stir in the cheese, parsley and nuts.

Marsala Chicken and Mushroom Casserole

This Rachael Ray recipe is my new favorite. I am in love with it and couldn't stop eating it :-)! I wish we had leftovers, because it is sounding awfully good again right about now. I made an extra dish for a friend, I didn't double the mushrooms and chicken (just divided the 10 oz between the 2 dishes and used 3 cups of chicken divided between the 2) but doubled everything else.

Ingredients:

2 tablespoons butter
10 ounces sliced mushrooms
(I added 1 t minced garlic and 1/2 white onion, chopped)
1 1/2 tablespoons flour (or cornstarch)
1/2 cup marsala wine or white wine (I used marsala cooking wine)
1/2 cup heavy cream (next time I'll try using a FF version instead)
2 tablespoons chopped flat-leaf parsley
Salt and pepper
1 cup long-grain rice
2 packed cups coarsely chopped rotisserie chicken
2 tablespoons grated parmesan cheese

Directions:
1.Preheat the oven to 350°. In a large skillet, heat the butter over medium-high heat until just melted. Add the mushrooms and cook, stirring occasionally, until softened, about 5 minutes. Sprinkle the flour on top and stir in for 1 minute. Stir in the marsala and cream and simmer, stirring occasionally, until slightly thickened, about 3 minutes. Stir in 2 cups water, the parsley, 1 teaspoon salt and 1/2 teaspoon pepper.
2.In a greased 9-inch-by-13-inch casserole, spread the rice in an even layer; top with the chicken. Pour the mushroom gravy on top. Cover snugly with foil and bake until bubbly, about 35 minutes. Discard the foil, sprinkle the parmesan on top and bake for 5 minutes more.

Bacon and Wild Mushroom Risotto with Baby Spinach

The May 2010 issue of Cooking Light featured a series of risotto recipes and this is the one that I was most excited to try. It was my first time trying risotto and I'm ready to try another now...especially since I have the rice I need for it! This one was SO good! The crunchy bacon was the highlight and I loved the rich flavor the different mushrooms added to it. Tasty!!!

Ingredients:
4 cups Homemade Chicken Stock (you can view their recipe here; I just used store bought chicken broth)
6 bacon slices, chopped
1 cup chopped shallots (I used green onions)
1 Tablespoon extra-virgin olive oil
1 teaspoon chopped fresh thyme
4 garlic cloves, minced
4 ounces cremini mushrooms, sliced
4 ounces shiitake mushrooms, stemmed and sliced
4 ounces oyster mushrooms, sliced
1 cup uncooked Carnaroli or Arborio rice (they said Carnaroli was best, but I could only find Arborio at my store)
1/3 cup Madeira wine or dry sherry (I used sherry cooking wine)
4 cups baby spinach
1/2 cup (2 ounces) grated fresh Asiago cheese
1/2 teaspoon salt (leave this out if you use store bought chicken broth, or use low sodium chicken broth...ours was a little on the salty side)
1/4 teaspoon freshly ground black pepper

Directions:
-Bring Homemade Chicken Stock to a simmer in a small saucepan (do not boil); keep warm over low heat.
-Heat a large Dutch oven over medium heat. Add bacon to pan; cook 8 minutes or until crisp, stirring occasionally. Remove bacon from pan with a slotted spoon.
-Add shallots, oil, thyme, and garlic to drippings in pan; cook 6 minutes or until shallots are tender, stirring occasionally.
-Stir in mushrooms; cook 8 minutes, stirring occasionally.
-Add rice, and cook 1 minute, stirring constantly.
-Stir in Madeira; cook 1 minute or until the liquid is nearly absorbed, stirring constantly.
-Stir in 1 cup stock; cook 4 minutes or until the liquid is nearly absorbed, stirring constantly.
-Add remaining stock, 1/2 cup at a time, stirring constantly until each portion of stock is absorbed before adding the next (about 25 minutes total).
-Stir in spinach; cook 1 minute. Remove from heat; stir in cheese, salt, and pepper. Sprinkle with bacon.

Even Better Cilantro Lime Rice

This version of Cilantro Lime Rice (from The Sister's Cafe) is even better than the version I found last year. It turned out nice and fluffy and super flavorful. A perfect compliment to any Mexican dinner!

Ingredients:
1/2 bunch of cilantro
1/2 onion
1 (4 oz) can green chilies
3 c rice
6 c water
6 cubes chicken bouillon (I used 6 c chicken broth instead)
4 tsp garlic, minced
1 Tb canola oil
2 Tb fresh lime juice

Directions:
Blend cilantro, onion, and chilies in food processor.
Bring water/broth to boil and add all other ingredients, simmer covered for 30 minutes or until rice is cooked.

Onion Rice

This is a simple and basic recipe, but a great way to add a little extra pizazz to a plain rice side. I didn't have red onions on hand, so I just used a white onion but we loved it. It didn't take away from the flavor of our main dish but was still good enough to stand on it's own. (recipe came from All Recipes)

Ingredients:

1 tablespoon vegetable oil
1 red onion, chopped (I used white onion)
1 cup long-grain white rice (I used 1 1/2 c)
1 teaspoon ground black pepper
2 cups chicken broth (I used 3 c)

Directions:
Heat the oil in a saucepan over medium heat.
Stir in the onion, and cook until almost tender.
Stir in rice, and continue cooking until coated with oil.
When onion is tender and rice begins to brown lightly, season with pepper, and pour in the broth.
Bring to a boil. Reduce heat to low, cover, and simmer 20-30 minutes.

Cheesy Rice Fritters

These little guys were a surprise hit with everyone in the family! I knew I would like them, but Mike and the girls loved them almost as much as I did! I made a few with breadcrumbs and most of them without and the ones without stayed together and got even crispier on the outside than the ones with! I didn't have any bacon on hand and just sliced up some ham lunch meat and it seemed to work fine, but you could leave the meat out to keep it vegetarian too. The other change I made was adding some finely diced onion when cooking the ham and I thought it was a great addition! I subscribed to Rachael Ray's magazine during some Amazon deal last year and I'm so glad I did - I have come across lots of tasty recipes in them each month and it's much more fun to flip through a magazine than search her site!

Ingredients:
* 1 cup arborio rice (I used brown rice)
* 3 slices bacon, chopped (I used sliced ham lunch meat)
***1/2 c. finely chopped onion***
* 1 cup shredded mozzarella cheese
* 1 cup grated parmesan cheese
* 1 large egg, lightly beaten
* Salt and pepper
* 1/2 cup seasoned breadcrumbs (optional)
* 1/4 cup extra-virgin olive oil
* One 10-ounce bag spinach, coarsely chopped
* 1 pinch crushed red pepper

Directions:
1. Line a baking sheet with parchment paper. In a medium saucepan, bring the rice and 2 1/2 cups water to a boil. Lower the heat and simmer until the rice is still firm but cooked through and the water has evaporated, about 20 minutes. Transfer to a large bowl and let cool slightly.
2. Meanwhile, in a large skillet, cook the bacon until crisp. Using a slotted spoon, add the bacon to the rice, reserving the skillet with the bacon fat. Stir the mozzarella, parmesan and egg into the rice mixture; season with salt and pepper.
3. Divide the rice mixture into 12 mounds on the prepared baking sheet. Flatten into 3-inch patties. Sprinkle on both sides with the breadcrumbs.
4. Add the olive oil to the skillet and heat over medium-high heat. Working in batches, add the patties and cook, turning once, until crisp, about 5 minutes. Drain on paper towels. Add the spinach to the skillet and cook over high heat, turning, until wilted, about 2 minutes; season with the crushed red pepper. Top with the fritters.
