Sausage and Spinach Rice Bowls

I found this meal idea on Fabulously Delicious. It was easy, fast and super tasty. I ate it for I think 4 meals as leftovers over the next few days and still loved it! Sometimes I topped it with some shredded cheese too, which made it even better. Next time I want to try it with quinoa...I think it would be fab!

Ingredients:
1 1/2 cups cooked rice (I brown rice, but I think I'll use quinoa next time)
1 tsp. olive oil
1 lb. hot Italian turkey sausage links, casings removed
1/2 onion, chopped
5 cloves garlic, minced
1 4-oz can sliced mushrooms
(I added 1 14 oz can of artichokes, drained)
1/2 cup chopped roasted red bell peppers (jarred or fresh)
1 1/2 cups chopped fresh spinach

Directions:
In a large skillet, heat olive oil over medium heat. Add sausage and onion; cook, stirring to crumble sausage, until sausage is cooked through and onion is tender. Stir in garlic; cook 2 minutes more. Add mushrooms and peppers, stir to combine, then add spinach. Cook until spinach is just wilted. Stir in rice, mix well to combine and continue cooking until heated through.

Kebabs with Spiced Honey Glaze (Beef or Chicken)

I have been wanting to make these for a long time and they were well worth the wait! The week got crazy and I ended up waiting too long to use the beef I bought for them (I am particular about my meat), so I used chicken instead and they were still delicious! I would have never thought to grill canned artichokes, but they were amazing and the spiced honey glaze with sooo delicious! This is a Rachael Ray recipe and she doesn't provide nutrition information so I did my best :-) with it (I used 2 chicken breasts, 1/2 red onion, 1 c grape tomatoes, the whole can artichokes and only 2 T olive oil).

Ingredients:
1/4 cup honey
1/2 teaspoon ground cumin
1 1/2 pounds boneless beef short ribs, cut into 1-inch cubes (or chicken)
24 grape tomatoes
3 red onions, cut into 1-inch cubes (I used less)
1 (14 ounce) can artichoke hearts, drained and halved
3 tablespoons extra-virgin olive oil
Salt and pepper

Directions:
1. Preheat a grill to medium-high. In a small bowl, mix together the honey and cumin.
2. Thread the beef, tomatoes, onions and artichoke hearts onto 8 skewers; brush with the olive oil and season with salt and pepper. Arrange the kebabs on the grill, cover and cook, turning occasionally, until grill marks appear, about 10 minutes for medium-rare. Brush immediately with the honey mixture. (Tip Set the honey mixture near the hot grill to warm it up for easier brushing.)

Per my best calculations, using chicken breasts, each kebab is approx 100 calories.

Artichoke Mushroom Lasagna

I don't think I've ever been so behind on posting recipes before...I like to get them up here as soon as I make them. But life has been SO busy that it just has been low on the priority list. This lasagna was a hit though...even with Mike who is not a big pasta (or meatless dish) fan. In fact, he even had leftovers of it the next day...and he's not a leftovers guy either, so that says TONS!!! I used gluten-free noodles and loved it! (recipe from Taste of Home apr/may 2011)

Ingredients:
* 1 pound sliced baby portobello mushrooms
* 2 tablespoons butter
* 3 garlic cloves, minced
* 2 cans (14 ounces each) water-packed artichoke hearts, rinsed, drained and chopped
* 1 cup chardonnay or other white wine (used white cooking wine)
* 1/4 teaspoon salt
* 1/4 teaspoon pepper
SAUCE:
* 1/4 cup butter, cubed
* 1/4 cup all-purpose flour (I used cornstarch)
* 3-1/2 cups 2% milk
* 2-1/2 cups shredded Parmesan cheese
* 1 cup chardonnay or other white wine
ASSEMBLY:
* 9 no-cook lasagna noodles (I used gluten-free and cooked them before assembly)
* 4 cups (16 ounces) shredded part-skim mozzarella cheese, divided

Directions
* In a large skillet, saute mushrooms in butter until tender. Add garlic; cook 1 minute longer. Add the artichokes, wine, salt and pepper; cook over medium heat until liquid is evaporated.
* For the sauce, in a large saucepan over medium heat, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in Parmesan cheese and wine.
* Spread 1 cup sauce into a greased 13-in. x 9-in. baking dish. Layer with three noodles, 1-2/3 cups sauce, 1 cup mozzarella and 1-1/3 cups artichoke mixture. Repeat layers twice.
* Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, 15-20 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting.

Lemon Artichoke Risotto

This is yet another Rachael Ray magazine recipe, and I think the last one I saved from her most recent issue. This was also my favorite of the ones I tried! It was SOOO delicious! I was glad it made enough for a couple days worth of leftovers for lunch because I looked forward to it every time. Even my kiddos ate most of theirs which shocked me...and made me happy :-)! The nuts give the meal enough substance that I don't even think you miss the meat.

Ingredients:
2 cups chicken broth
4 T butter
1 onion, finely chopped
2 cups arborio rice
1 1/4 c drained chopped canned artichoke hearts (1 can)
grated peel of 1 lemon plus 2 t lemon juice (I used 2 1/2 t juice and no peel)
salt and pepper
2/3 cup grated parmesan cheese
1/3 c chopped flat-leaf parsley
1/3 c walnuts, toasted and chopped (I thought I had some but didn't so I used pecans instead and they were delish!)

Directions:
-In saucepan, bring the broth and 4 c water to boil, cover and keep at a simmer.
-In large saucepan, melt 2 T butter over med heat. Add the onion and cook, stirring, until softened, about 5 minutes. Add the rice and stir until lightly toasted, about 2 minutes.
-Stir in 1 cup of broth mixture, bring to a simmer and cook, stirring, until the liquid is absorbed, 2-3 minutes. Maintaining a low simmer, continue to add the broth mixture, 1/2 cup at a time, stirring frequently and allowing the rice to absorb the liquid. Cook until the rice is tender, about 20 minutes.
-In the last 3 minutes of coking, add the artichoke hearts, lemon peel, lemon juice and the remaining 2 T butter; season with salt and pepper. Stir in the cheese, parsley and nuts.
