Southwestern Chicken and Spaghetti Squash Salad
I was excited to try spaghetti squash for the first time and had a lot of fun peeling it out after it was done baking...crazy how much it really looks like spaghetti! The salad was a surprise hit. I was pretty sure I would like it but even Mike raved about this one. The dressing is delish and it is a healthy yet filling meal. We will be making it again soon!
Ingredients:
for salad —
1 small spaghetti squash
1 can black beans, drained and rinsed
1 orange or red bell pepper, sliced thin
1 bunch cilantro, minced
2 cups shredded green cabbage
2 cups thinly sliced cooked chicken breast (I used 1 can chicken, drained)
avocado for serving
for zesty buttermilk dressing—
1/2 cup well shaken buttermilk
1/4 cup mayonnaise
juice of 1 lime
1/2 tsp garlic powder
1/2 tsp cumin
pinch of cayenne pepper
1/4 tsp salt
Directions:
Preheat oven to 400 degrees. Slice your spaghetti squash in half length-wise and scoop out the seeds. Place the squash cut side down on a greased sheet pan and bake for 40 minutes, until very tender. Let squash cool before using a fork to scoop out “spaghetti” and place in a bowl. You can do this step up to three days before you prepare the salad.
Next, make the dressing. Whisk together the buttermilk, mayonnaise, lime juice, garlic powder, cumin, cayenne and salt in a small bowl. Set aside.
To prepare the salad, place the cooled spaghetti squash in a large serving bowl. Top with black beans, chicken, bell pepper, shredded green cabbage, cilantro and jicama (I left out), if using. Toss all ingredients together well. Drizzle dressing over salad {you may not want/need to use all the dressing}.
Serve salad on plates topped with sliced avocado.
**Assembled salad will stay fresh, without dressing and avocado, for up to four days covered in the fridge. Dressing will stay fresh for up to a week and is also great served as a dip with raw veggies

Fresh Corn Salad
Ingredients
1/2 cup cider vinegar
1/4 cup sugar
1 t kosher salt
1/2 t coarsely ground black pepper
4 ears fresh corn
1/2 cup finely diced red onion (cut to same size as the clusters of corn kernels), soaked in ice water for 20 minutes and patted dry (I totally forgot to do this, but it was fine)
1/2 cup cucumber, seeded, not peeled if unwaxed, then diced to same size of onions
1/2 cup red or orange sweet pepper, diced to same size as onions
1/2 cup cherry or pear tomatoes, halved or quartered
3 T parsley, finely torn
1 T basil leaves or buds, pulled apart
1 T fresh jalapeno, seeds and veins removed, very finely diced*
1/2 t sea salt or kosher salt
2 cups small arugula leaves
Directions
1. For dressing, in a glass bowl whisk together vinegar, sugar, the 1 teaspoon kosher salt, and black pepper until sugar is dissolved. Let dressing stand while preparing salad.
2. For salad, cut corn kernels from cobs. In a large bowl toss corn and remaining ingredients except sea salt and arugula leaves.
3. To serve, transfer salad to large serving bowl. Season with the 1/2 tsp. sea salt. Add the dressing; gently thread in arugula leaves. Serve immediately. (Cucumbers and tomatoes will begin to break down.) Makes 8 servings

Quinoa Salad with Zucchini, Arugula, Tomatoes and Mint Vinaigrette
Salad
1 C. Quinoa
2 C. Chicken Stock (I had made a big batch with just water, and it was fine)
½ t. Salt
2 Medium Zucchini, one inch julienne slices
2 C. Tomatoes, small orange or cherry, halved
2 C. Arugula
½ C. Pine nuts, dry roasted or toasted
¼ C. Cilantro
Salt and Pepper to taste
In a medium sauce pan, add the quinoa and chicken stock plus ½ t. of salt. Quickly stir and bring the mixture to a boil. After it boils, reduce the heat to simmer and cover with a lid for about 10 minutes. Check and stir the quinoa. If liquid remains, check every 2 to 3 minutes until liquid has evaporated. Set aside to cool.
Once the quinoa is cooled, add to a large bowl to assemble the salad. Add the zucchini, tomatoes, pine nuts and cilantro. Toss gently and add the vinaigrette and toss again to combine. Right before serving, toss in the Arugula. Taste and then season with additional salt and pepper as desired.
Mint Vinaigrette
1 C. Fresh mint leaves, lightly packed
3 T. Red wine vinegar
2 t. Dijon mustard
2 Garlic cloves, minced
½ t. Sugar
½ t. Salt
8 Grinds pepper
½ C. Olive Oil
Add all of the above ingredients to a food processor. Pulse until well combined. Taste and adjust salt and pepper to your desired taste level. Set aside to strengthen the flavors for about one hour.
Calories...I divided it into 6 servings, which per my calculations would make it about 315 calories per serving

Grammy's Loaded Veggie Salad
Ingredients:
2 7oz mixed greens
2 lge. Avocados
L lge. Cucumber
½ (10oz.) package shredded carrots
¾ C. dried cranberries
½ C. sliced almonds, toasted
1 pint grape tomatoes, halved
1 (4-ounce) package crumbled feta cheese with herbs (I use 6 oz)
Kosher salt to taste
Freshly ground pepper to taste
Dressing:
1 (0.7 ounce) package Italian dressing mix
½ Cup olive oil
¼ Cup balsamic vinegar
2 T. sun dried tomatoes chopped
Croutons (optional)

Quinoa and Grilled Corn Salad with Cilantro Vinaigrette
Ingredients:
2 cups of cooked Quinoa, rinsed and cooked according to package directions
5 ears of corn, husk removed, brush with olive oil and grilled, remove corn with sharp knife (I put under broiler in oven for a bit)
2 avocados, diced and sprinkled with lemon juice to prevent browning
2 cups tomatoes, red and yellow cherry variety or equivalent
1 small red onion, finely diced (I'll just use 1/2 next time)
¾ cups feta cheese, crumbled
1 ½ cups english cucumber, skin on and chopped small dice
(I added one can black beans, rinsed and drained)
2 TB of chopped fresh cilantro leaves
Add to a large bowl and refrigerate until ready to use.
Cilantro Vinaigrette
6 T. Olive oil
2 T. Sherry vinegar
1 tsp. Garlic powder
2 T. Fresh cilantro, minced
½ tsp. Salt
10 Grinds of fresh ground pepper
Add all of the above ingredients in a small glass jar with a lid. Shake really well. Taste and adjust seasoning as you desire.
When ready to serve salad, add the dressing and gently toss.

Quinoa Black Bean Salad
Ingredients:
1 cup Quinoa, rinsed
2 cups water (I used chicken broth)
1-2 Limes
Cilantro
Olive Oil
Salt
Lettuce or Spinach
Avocado, diced
Red or Green Peppers, diced
Tomatoes, diced
Black Beans, rinsed
Directions:
Rinse quinoa well under cold, running water. You'll need a fine, mesh strainer for this or you can place a paper towel in a colander. Quinoa has to be rinsed because it has this funny taste/scent if you don't. (the quinoa I use comes rinsed already so I skipped this step)
Pour rinsed quinoa into 2 cups of boiling water and turn down the heat to medium. Cook for about 10 minutes and then turn off the heat and let it sit. When you turn off the heat it might look oatmeally, but give it 15+ minutes and it will become light and fluffy. Transfer quinoa to a large salad bowl.
Chop cilantro and throw into quinoa. Squeeze fresh lime into quinoa mixture. Add salt and olive oil to taste.
The rest of the ingredients can be thrown into the quinoa, according to personal preference. (I added 1 red pepper, tomatoes, ` can black beans and avocado)

Bean Salad

Ingredients:
Salad:
1 can black beans, rinsed
1 can garbanzo beans, rinsed
1 can kidney beans, rinsed
1 can olives, sliced
1 can, or 2 cups frozen, corn
1 yellow, orange, and red pepper chopped
1/2 red onion, finely chopped
4 plum tomatoes, chopped and seeded
1/3 cup chopped cilantro
2-3 avocados, leave pit in salad (it's supposed to prevent it from browning)
1/2 cup - 1 cup feta cheese
pine nuts (optional, we didn't have)
Dressing:
1/2 cup olive oil
4 limes, squeezed
1/4 cup rice vinegar or apple cider vinegar
1 Tbs cumin
1 Tbs salt
Directions:
Mix the salad ingredients in a large bowl. In a small bowl mix the dressing and pour over salad. Mix gently and enjoy! (If you want to prepare ahead of time, just leave out the avocados and feta and mix those in with the dressing at the end)

Fresh Corn Salad
Ingredients:
6 ears of corn, shucked
1/2 cup finely diced red onion
1 cup cherry tomatoes, sliced in half
3 tablespoons cider or red wine vinegar (I used red wine vinegar)
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves
Directions:
Bring a large pot of water to a boil. When boiling, add one tablespoon sugar and one tablespoon vinegar. Add the cobs of corn to the pot of water and bring to a rolling boil. Cover the pot, remove from the heat and let the corn sit for 10 minutes. Remove the corn from the pot. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a medium bowl with the red onions, tomatoes, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Add additional salt and pepper to taste, if desired. Serve cold or at room temperature.

Chicken Salad with Yogurt Ranch Dressing
Ingredients:
* About 1/4 cup extra-virgin olive oil
* 1 clove garlic, grated or minced
* Juice of 1 lemon
* 1 tablespoon white wine vinegar (I used red because I was out of white)
* Salt and pepper
* 1 cup fat-free greek yogurt
* A small handful each finely chopped dill, parsley and chives
* A few dashes hot sauce
* 1 rotisserie chicken, skin and bones discarded and meat shredded
* 1 small red bell pepper, seeded and chopped
* 1 small red onion, chopped (I unfortunately used my red onion the day before so I put in extra green onions, but I bet it's even better with red!)
* 1/3 seedless cucumber, chopped
* 2 ribs celery from the heart, thinly sliced on an angle
* 2 plum tomatoes, seeded and diced
* 4 flatbreads, warmed
Directions:
In a large bowl, combine the EVOO , garlic, lemon juice and vinegar; season with salt and pepper. Stir in the yogurt, herbs and hot sauce. Add the chicken, bell pepper, onion, cucumber and celery; season with salt and pepper. Top the salad with the tomatoes and serve with the flatbreads. (or chips, etc.)

Cranberry Pear Tossed Salad
Ingredients:
* 1/3 cup apricot nectar
* 1/3 cup red wine vinegar
* 1/3 cup canola oil
* 2 teaspoons Dijon mustard
* 1/4 teaspoon salt
* 1/8 teaspoon pepper
* 2 tablespoons sugar
* 1/2 cup chopped walnuts
* 12 cups torn mixed salad greens
* 3 medium pears, sliced
* 1/2 cup dried cranberries
* 3/4 cup crumbled blue cheese
Directions:
1. For dressing, in a bowl, whisk together the first six ingredients; set aside. In a heavy skillet, melt sugar over medium heat, stirring constantly. Add walnuts; stir to coat. Remove from the heat.
2. In a large salad bowl, combine greens, pears and cranberries. Drizzle with dressing. Add nuts and blue cheese; toss.

Greek Salad (and a Giveaway!)
Ingredients:
* Romanine lettuce (chopped) - 6 cups
* Tomatoes (chopped) - 3 cups
* Red onion (chopped) - 1 cup
* Cucumber (chopped) - 1/2 cup
* Green pepper (chopped) - 1/2 cup
* Feta cheese (crumbled) - 3 oz
* Olives - 16 to 20
* Olive oil - 3 tbsp
* Fresh dill (chopped) - 3 tbsp
* Fresh parsley (chopped) - 1/4 cup
* Lemon juice - 1 tbsp
* Garlic (minced) - 1 clove
* Oregano - 1/2 tsp
* Salt - 1/4 tsp
Directions:
1. Mix together the olive oil, lemon juice, oregano, parsley, dill, garlic, and salt.
2. Mix the lettuce, tomatoes, red onion, cucumber, green pepper well.
3. Add the dressing to the salad mix and top off with feta cheese and olives.

Chicken Salad Piccata
Ingredients:
* 1 1/2 pounds small red potatoes, quartered
* 1/2 pound green beans, halved crosswise
* 1/4 cup plus 2 tablespoons extra-virgin olive oil
* 2 tablespoons coarsely chopped capers
* 1/4 cup chopped flat-leaf parsley
* Grated peel and juice of 1/2 lemon
* Salt and pepper
* 1 large egg
* 1/4 cup flour
* Two 6-ounce skinless, boneless chicken breast halves, lightly pounded
* 1/4 cup chicken broth
Directions:
1. In a large saucepan, add the potatoes and enough salted water to cover by 1 inch. Bring to a boil and cook until almost tender, about 10 minutes. Using a slotted spoon, transfer to a colander. Add the green beans to the boiling water and cook, stirring, for 2 minutes. Drain in the colander with the potatoes; let cool slightly.
2. In a large bowl, whisk together 1/4 cup olive oil, 1 tablespoon capers, 3 tablespoons parsley, the lemon peel and half of the lemon juice. Add the potatoes and beans and toss; season with salt and pepper.
3. In a shallow bowl, beat the egg. In another shallow bowl, season the flour with salt and pepper. In a large nonstick skillet, heat the remaining 2 tablespoons olive oil over medium-high heat. Coat the chicken breasts with the seasoned flour, then dip in the egg, allowing any excess to drip off, and coat with the flour again, shaking off the excess. Add to the skillet and cook, turning once, until golden, about 8 minutes. Transfer to a cutting board and cut into strips.
4. Add the chicken broth to the skillet; cook over medium heat, scraping up any browned bits. Remove from the heat and stir in the remaining 1 tablespoon capers, 1 tablespoon parsley and lemon juice. Top the salad with the chicken and drizzle with the pan sauce.

Harvest Salad
This was my other contribution to our Labor Day BBQ. I loved the combination of flavors from the ingredients...nothing like a good green salad! (and it's from All Recipes)
Ingredients:
1/2 cup chopped walnuts
1 bunch spinach, rinsed and torn into bite-size pieces
1/2 cup dried cranberries
1/2 cup crumbled blue cheese
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
1/2 red onion, thinly sliced
2 tablespoons red raspberry jam (with seeds)
2 tablespoons red wine vinegar
1/3 cup walnut oil freshly ground (I used olive oil)
black pepper to taste
salt to taste
Directions:
Preheat oven to 375 degrees F.
Arrange walnuts in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
In a large bowl, toss together the spinach, walnuts, cranberries, blue cheese, tomatoes, avocado, and red onion.
In a small bowl, whisk together jam, vinegar, walnut oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.

Potato Salad
I found this recipe on All Recipes (submitted by cheftini) and I've decided this is going to be "my" potato salad recipe :-). I loved it! It has enough of the core potato salad ingredients that it gives you that classic potato salad taste I love, but also enough variation to give that little something special to set it apart.
Ingredients:
6 eggs
10 red potatoes
1 cup mayonnaise
1/2 cup ranch dressing (I used light, it helps, right :-)?!)
1/3 cup dill pickle relish
2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt (I used kosher salt)
1/4 teaspoon ground black pepper
1/8 teaspoon paprika
1/8 teaspoon celery seed
1 onion, chopped (very finely)
1/4 cup pepperoncini
Directions:
Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water; cool the eggs under cold running water in the sink. Peel and chop the cooled eggs.
Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, 15 to 20 minutes. Drain and refrigerate until cold. Peel and cube once cold.
Stir together the mayonnaise, ranch dressing, relish, mustard, salt, pepper, paprika, and celery seed in a mixing bowl. Add the eggs, potatoes, onion, and pepperoncini; stir until evenly mixed. Cover and refrigerate at least 2 hours before serving. (I made it the night before to make it even better!)

Farmer's Market Potato Salad
This isn't really like a potato salad in the classic sense...no mayo involved :-). I LOVED it and have eaten the leftovers for lunch the past couple days. I thought the mix of veggies was really, really good...especially paired with the tang of the dressing. I preferred the salad warm, but it was good cold too! (recipe from Cooking Light) (and a warning that you do have to get your kitchen warm making it - using the oven to roast the potatoes and corn)
Ingredients:
1 cup fresh corn kernels (about 2 ears)
2 pounds fingerling potatoes, cut into 1-inch pieces (I used red potatoes)
2 1/2 tablespoons olive oil, divided
2 tablespoons chopped fresh tarragon
2 tablespoons cider vinegar
2 tablespoons whole-grain Dijon mustard
1/2 teaspoon hot pepper sauce (such as Tabasco)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Cooking spray
3/4 cup vertically sliced red onion
3/4 cup diced zucchini
1 cup cherry tomatoes, halved
Ingredients:
1. Preheat oven to 425°.
2. Place corn and potatoes on a jelly-roll pan. Drizzle vegetables with 1 tablespoon oil; toss to coat. Bake at 425° for 30 minutes or until potatoes are tender. Place mixture in a large bowl. Combine tarragon and next 5 ingredients (through pepper) in a small bowl, stirring with a whisk. Gradually add remaining 1 1/2 tablespoons oil, stirring constantly with a whisk. Drizzle potato mixture with dressing; toss gently to coat.
3. Heat a large skillet over medium heat. Coat pan with cooking spray. Add onion and zucchini to pan; cook 4 minutes or until lightly browned, stirring occasionally. Add zucchini mixture and tomatoes to potato mixture; toss gently to combine.

Southwestern Cobb Salad
This yummy salad from Cooking Light was WONDERFUL!!! It included so many things that I love...avocados, black beans, cheese, a good dressing, a southwestern twist. I had more for lunch today and it was even better than I remembered it from the night before :-). (and I totally copied how they set up the picture in the magazine...it looks much prettier that way)
Ingredients
Vinaigrette:
3 tablespoons white wine vinegar (I used red since that was what I had on hand)
1 teaspoon honey
3/4 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon ground red pepper
2 tablespoons canola oil
Salad:
3 slices center-cut bacon
Cooking spray
8 ounces skinless, boneless turkey breast, cut into 1/2-inch pieces (I used chicken breast)
1/4 teaspoon salt
8 cups torn romaine lettuce
1/2 cup refrigerated fresh pico de gallo
1/2 cup diced avocado
1/2 cup (2 ounces) crumbled queso fresco
1/4 cup chopped green onions
1 (15-ounce) can low-sodium black beans, rinsed and drained
Directions:
1. To prepare vinaigrette, combine first 6 ingredients in a medium bowl, stirring with a whisk. Gradually add oil, stirring constantly with a whisk; set aside.
2. To prepare salad, cook bacon in a nonstick skillet over medium heat until crisp. Remove bacon from pan; crumble. Wipe pan clean with paper towels. Increase heat to medium-high. Coat pan with cooking spray. Sprinkle turkey with salt. Add turkey to pan; sauté 4 minutes or until done.
3. Arrange 2 cups lettuce on each of 4 plates. Top each serving with about 2 teaspoons bacon, 5 tablespoons turkey, 2 tablespoons pico de gallo, 2 tablespoons avocado, 2 tablespoons queso fresco, 1 tablespoon onions, and about 1/3 cup beans. Drizzle vinaigrette evenly over salads.

Dill Potato Salad
We just got home from a week at the beach with my family. Each night someone else was in charge of dinner and on our night we served up those delicious bacon-wrapped hot dogs , that I loved, with this new potato salad that I found on my old college roomie Kim's blog. According to her post, she needed to make potato salad for a reception (which was funny because she doesn't even like potato salad) and she went with this Ina Garten recipe because after 181 reviews it still had 5 stars. I happen to LOVE potato salad so I was excited to try this one. It was simple to make and sooo good. I have never used fresh dill before and I loved the summery flavor it gave the salad!
Ingredients:
3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion
Directions:
Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

Our Weekly Salad Bag

We try to eat salad with nearly every dinner, but it was such a pain to make the salad every night that we often would just skip it. Mike had the idea to make a huge one, put it in a ziploc bag and keep it on hand. At the beginning of each week we (well, usually Mike) chop up our veggies, throw them together, and we're all set.
This bag is Mike's favorite mix:
iceberg lettuce,
shredded carrots (I buy a pre-shredded bag),
cilantro
and green onions.
( I sneak in other lettuces when I can :-)

Chinese Chicken Salad
Mckell was kind enough to share this delicious salad with me over the weekend. She found the recipe on My Kitchen Cafe and it is SOOO good! I was feeding Preston while she dished it up and she knows me well enough that she even took a picture of it for me before we started eating without me asking :-). Mike had some too and LOVED it. I will definitely make it on my own sometime! Thanks for sharing!!!
Ingredients:
1 package (3 ounces) oriental-flavor ramen noodle soup mix (I often use two packages of the noodles to give my kids more crunch to eat)
½ cup pre-sliced almonds
¾ cup bottled red wine vinaigrette (or make your own following the recipe below)
1/2 package (16 ounces) coleslaw mix or broccoli slaw mix
1 package romaine lettuce
2 cups shredded cooked chicken
½ cup fresh cilantro leaves (optional)
2 scallions, both white and light green parts, chopped
Directions:
-Preheat the oven to 350 degrees. Break up the ramen noodles with your hands and place them and the almonds on a rimmed baking sheet. Bake until the noodles and almonds turn light brown, 6 to 7 minutes.
-Meanwhile, pour the red wine vinaigrette into a measuring cup (or make your own with the recipe below) and stir in the packet of seasoning from the ramen noodle soup mix. Set the salad dressing aside. Place the slaw mix (I only use 1/2 bag), romaine lettuce, chicken, cilantro and scallions in a large serving bowl.
-Toss to combine the ingredients well. Just before serving, pour the salad dressing over the salad and toss to coat. Scatter the toasted almonds and noodles on top and serve.
Serves 4 to 6 as a main course
Homemade Red Wine Vinaigrette
Whisk together:
¾ cup vegetable oil
6 tablespoons red wine vinegar
4 tablespoons sugar
½ teaspoon black pepper
Ramen noodles seasoning packet

Craisin and Sugared Pecan Salad
I think this was the biggest hit of our 4th of July BBQ! I found the recipe on Tastebuds and it was a perfect summer salad! Such a great combination of flavors and super easy to make as well. I used at least twice as much lettuce (I bought a big bag of pre-torn romaine lettuce) and doubled the dressing recipe but probably only used 3/4 of it. This is definitely one you should try out this summer!
Ingredients:
1 large head romaine lettuce; rinsed & chopped
1 cup chopped celery
1 cup craisins (I like the cherry flavored)
1 cup grated monterey jack cheese
6 oz whole pecans
1/3 cup sugar
Directions:
In a med skillet heat pecans & sugar over medium heat, stirring to coat, until sugar has melted & adhered to pecans. Remove from heat, cool, chop. Combine all ingredients & toss.
DRESSING:
Ingredients:
1/4 cup sugar
scant 1/2 cup apple cider vinegar (measure out 1/2 cup & take out 1-2 Tbsp)
1 Tbsp poppy seeds
1 Tbsp mustard
1 tsp salt
1/4 - 1/2 of a small red onion; diced (depending on how spicy you want it)
1 cup canola oil
Directions:
Put everything except oil in the blender & pulse to combine & chop onion. Add oil and blend until well mixed & thick.
Pour over salad right before serving.
