Hash Brown Casserole


Ingredients:
- 6 eggs, well beaten
- 1 can (12 oz) evaporated milk (I used FF)
- 1 t. salt
- 1/2 t. pepper
- 1 package (30 oz) frozen shredded hash browns
- 2 c. shredded cheddar cheese
- 1 med. onion, chopped
- 1 small green bell pepper, chopped
- 1 c. diced ham (I used lunch meat)

Directions:
- Preheat oven to 350 degrees. Grease 9x13in baking dish.
- Combine eggs, evaporated milk, salt and pepper in large bowl. Add potatoes, cheese onion, bell pepper and ham, if desired; mix well. Pour mixture into prepared baking dish.
- Bake for 60-65 minutes or until set.
